  • 2 lbs red potatoes, quartered
  • 4 boneless pork chops (or bone-in pork chops)
  • 1/3 cup avocado oil
  • 2 tablespoons ranch seasoning mix
  • 2 teaspoons apple cider vinegar
  • 2 tablespoons butter, cubed
  • Salt and black pepper to taste

Optional Add-Ins

  • 1 cup green beans (add in the last hour of cooking)
  • 1 can of cream of mushroom soup
  • 1/2 cup chicken broth (for extra sauce)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion soup mix
  • 1/2 teaspoon smoked paprika

Instructions

  1. Chop red potatoes into quarters and blanch them for 4 minutes.
  2. Place all ingredients into a freezer bag, seal, and store in the freezer if prepping ahead.
  3. When ready to cook, thaw overnight in the refrigerator.
  4. Spray the inside of the crockpot with non-stick cooking spray.
  5. Dump the contents of the bag into the crockpot, placing pork chops on top of the potatoes.
  6. Cook on high heat for 3-4 hours or low heat for 5-6 hours until pork chops reach a safe internal temperature of 145°F.
  7. Season with salt and pepper to taste and serve hot.
